Soup again? Yep, I could not resist trying this one. It had two of my favorite vegetables, and looked too easy to pass up. I modified it only slightly, using cubed soy mozzarella in place of goat cheese. The colors are magnificent, with the vegetables perfectly cooked, with only the slightest crunch.
